I started making my own fudge about two Christmases ago. I adore fudge and was always under the impression that making homemade fudge was mission impossible. Little did I know! It's one of the easiest things to make! Thing is too, there are so many variants you can bring to a fudge recipe: change up the nuts, mint extract rather than vanilla extract, switch from chocolate chips to semi-sweet chips... you can really make it your own! And what better time to make fudge than during the Holidays!? Like really...

I love cooking during the winter season. I also love cooking during the Holiday season. Seems like the meals and dishes we cook for and during this time of year hold a truly special intoxicating smell that just warms up your soul and brings a great deal of comfort. I hold so many fantastic memories from my childhood when my mom used to spend her days in the kitchen, cooking up a storm for us during the Holidays. It was special, it was magical! Perhaps my passion for cooking was born from those days... All I know is that there is no better time to cook than during those cold, snowy and gloomy days.

Every now and then I run out of inspiration. Menu inspiration that is. We have our favourites here at home which we do on a somewhat regular basis. We also venture down the new recipes road on a daily basis as well. And then there are times where laziness gets in the way. Can you really blame me? With all the other chores that pile up daily!? Uncomplicated, easy to make and still delicious dish ideas often come to the rescue! Thus the reason I love this rice recipe so dearly. This pilaf will dress up nicely any kind of main dish you serve it with. It is simple, easy and extremely tasty. Serves 8.

I am in love with chowders. Up until now, the clam was my all-time favourite. Until I made this one. Now my heart is thrown between the two! There's something about this type of soup that wins me over. Maybe it's the richness and deepness of the flavours... Okay, Okay! I know I said I was a huge sweets fan and also Asian food fan but I have another one to add to the list: pasta! I don't know if it's my Italian heritage that shaped me to be such way, but I adore pasta! And the apple never falls too far from the tree because my son could eat it for breakfast, lunch and dinner! So, my creative side is constantly called upon to create new meals made with pasta. Not easy but I manage not so bad I must admit. The Pesto Pasta Delight is something that was pretty much thrown together out of the blue and that turned out to be one of our favourite recipes for those quick and easy dinner nights. The veggies and pesto come together to create a taste that is sublime!

I don't know about you, but I love everything asian. Whether it be Chinese, Vietnamese, Thai, I have a humongous love affair with the various flavours and textures of their cuisine. My boyfriend and I have been growing more and more of a passion in preparing asian-inspired dishes. Our skills are slowly getting there too! Now, my favourite, for this pork recipe, is to serve it with jasmine rice and bok choy... almost a master chef dish, almost!
