These bars are made with wheat germ, one of the most nutritional products available. In fact, wheat germ contains 23 nutrients, and has more nutrients per ounce than any other vegetable or grain. It's very high in proteins, fibre, potassium, iron and vitamins such as A, B1 and E. These bars will be an excellent snack choice for you and your little ones, as they will provide that healthy energy to get through the day.
And here's a mommy trick... double the recipe and freeze the bars! You will always have some on hand and they are as yummy frozen than fresh, I guarantee! Try them out today!
1 c. smooth peanut butter
1/4 c. brown sugar
1/2 c. maple syrup
1/3 c. oil
2 tsp vanilla extract
3 c. oats
1/2 c. shredded unsweetened coconut
1/2 c. walnuts
1/2 c. dried raisins or chocolate chips
1/3 c. wheat germ
Preheat oven at 350F (180C). Line a 13"x9" pan with aluminium foil, making sure there's enough foil overhanging on both sides and then slightly cover with cooking spray.
In a large bowl, mix together, with a wooden spoon, the peanut butter, brown sugar, maple syrup, oil and vanilla. Mix until smooth. Incorporate the rest of the ingredients. Pour the mixture into the prepared pan. Bake in the oven for about 20 minutes, or until the edges become golden. Let it cool off 30 minutes, remove from pan and place on a cutting board. Let it cool off completely before cutting into bars.
