Did you know that Shelf safe milk has been around since the 1960s. Where have we, North Americans, been? Thanks to its convenience, continuous optimization of taste and quality and compact packaging, shelf safe milk represents the majority of milk consumed in Europe and South America where it’s hugely popular. It’s used widely in many other parts of the world that have less than ideal chilled distribution chains or that are subject to power outages. The United States is a late adopter of this technology for milk. And actually, many products you are familiar with use this technology. Products like juice (juice boxes), soymilk, broth and protein shakes in cartons you can find on the shelf of your grocer.

By now you must be curious as to what shelf safe milk is really all about and how on Earth it can be kept on a shelf! Shelf safe milk is Grade A fluid milk that requires no refrigeration until the package is opened, thanks to ultra pasteurization and special Tetra Pak cartons that preserve all the wholesome goodness of milk. Now kids can get the vitamins and nutrients of milk anytime, anywhere. The unique combination of pasteurizing milk at an ultra high temperature (UHT), and then packaging it in a Tetra Pak carton, results in milk that is shelf safe. Ultra-pasteurization eliminates bacteria and Tetra Pak carton packaging keeps out light, air and harmful contaminants. Thanks to the Tetra Pak shelf safe carton, the milk will retain its quality for up to six months. Check the date on the package. Once you open the carton, it needs to be refrigerated and can last up to 7-10 days.


 Shelf safe milk is what the industry calls UHT or Ultra High Temperature, meaning that the milk has been pasteurized at a higher temperature, but for a shorter time, to preserve taste and nutrition. Milk is the most common UHT product, but the process is also used for fruit juices (juice boxes), cream, soy milk, wine, soups and broth. With pasteurization, milk is heated to 161-167 degrees Fahrenheit with a holding time of 15-20 seconds before it is cooled. Along with correct cooling, and chilled distribution, pasteurized milk has a shelf life of five to 15 days. 

In UHT treatment, milk is exposed to brief, intense heating to temperatures in the range of 275-284 degrees Fahrenheit for only three seconds. Most importantly, UHT treatment is a continuous process which takes place in a closed system that prevents the product from being contaminated by airborne micro-organisms.

The UHT milk passes through heating and cooling stages in quick succession, then is immediately put into a sterile Tetra Pak shelf-safe carton. This process avoids any re-infection. The end result is a product that lasts up to six months without refrigeration or preservatives.

I think this shelf milk is a great idea because it offers you and your family convenience. Being a family on the go does not translate into giving up on nutrition.   5. I won this milk in a US only contest--it is REALLY good--I actually asked for the skim milk varieties--it tasted like whole milk. It really does last a long time--love it!!
